Date Balls


Holiday baking? These tiny treasures are so scrumptious – no one needs to know they are good for you!

Date Balls

1 cup coconut

2 cups organic brown rice krispies

¼ cup coconut oil

1 egg beaten

1 tsp. vanilla

1 cup chopped pitted dates

½ cup toasted chopped nuts (I used pecans)

Melt coconut oil over low heat. Pour in egg and chopped dates. Cook 8 minutes, stirring until dates dissolve. Take off heat. Add rice krispies, vanilla and nuts. Let cool. Roll into balls. Roll in coconut. Refrigerate or freeze. Delicious!
