Ginger Orange Stir Fry

Happy February! There’s no better way to spread warmth and love than spending time with family and friends! Even better when you can share a delicious meal together… like this fresh healthy stir fry!  The vibrant colours and flavours of this dish are like sunshine in a bowl 🙂

Ginger Orange Stir Fry

1 Tbsp. olive oil

1 small sweet potato, peeled and cut into small cubes

1 small onion, diced

1 clove garlic, finely chopped

1 tsp. grated fresh ginger

½ yellow bell pepper, chopped

½ red bell pepper, chopped

1 zucchini, chopped

1 cup broccoli florets

1 – 2 cups chopped bok choy

1 cup pea pods

1 orange, segmented (like a grapefruit)

½ tsp black sesame oil

2 Tbsp. soy sauce or tamari

1 Tbsp. honey

1 cup of cubed firm tofu; or cubed cooked chicken; or beans for added protein

Sea salt and pepper

Toasted sesame seeds, roasted cashews, chopped green onion – for garnish

Pour oil into a frying pan or wok. Cook the cubed sweet potato until soft and browned, then remove from pan. Place onions in the frying pan and sauté until translucent (about 3 minutes). Add garlic and ginger and cook for a few more minutes, until fragrant. Add in the bell peppers, zucchini and broccoli, mixing gently. Next add in the bok choy, pea pods, sesame oil, soy sauce, honey, orange segments and your protein of choice ( tofu, cooked chicken or beans ). Lightly sauté, until ingredients are hot, but still crispy. Add the cooked sweet potato. Season with salt and pepper. Top with seeds, nuts and green onion. Serve over a bed of steamed brown or basmati rice.
