Pineapple Fried Rice

Got left-over rice? Pineapple Fried Rice goes with pretty much anything, and is even a show stopper meal all on its own. Savoury and sweet… irresistible!

INGREDIENTS

  • 2 tablespoons olive or coconut oil
  • 1 small onion diced
  • 1 teaspoon fresh ginger (peeled and grated)
  • 1/2 red pepper (chopped)
  • 1/2 yellow pepper (chopped)
  • 1/2 cup broccoli florets (small pieces)
  • 1/2 cup peas
  • 2 eggs (beaten)
  • 6 cups cooked rice (I prefer brown rice)
  • 1 tablespoon soy sauce
  • 1 1/2 teaspoons sesame oil
  • 1 cup cook shrimp (peeled) -optional
  • 1/2 cup cooked ham (small cubes) -optional
  • 1 cup pineapple (core removed, cut into small pieces)
  • 1 green onion (chopped)
  • salt and pepper to taste

DIRECTIONS

Add oil to a Wok or large frying pan. Over medium heat, stir fry the onions until translucent (about 2 minutes). Add the ginger, peppers, broccoli and peas. Stir fry until crisp (about 2 minutes).

Move the vegetables to the side of the pan. Add your beaten eggs to the empty side of the pan, and scramble until cooked.

Add the rice, soy sauce, sesame oil, cooked shrimp and ham. Stir-fry everything together.
Add the pineapple and green onions. Mix again for a minute or two to heat through and let all the flavours mingle.

Season with salt and pepper to taste.
