
Nothing says LOVE like a delicious bowl of soup! This quick and easy meal is chock full of veggies, super nutritious, and like a great big warm hug, in a bowl. XO
Ingredients:
- 2 Tbsp olive oil
- 1 onion diced
- 2 cloves garlic minced
- 2 carrots sliced
- 2 celery stalks sliced
- 1 sweet potato, peeled and cubed
- 1 potato, peeled and cubed
- 1 small butternut squash peeled, seeded and cubed
- 4 cups vegetable broth
- 1 can coconut milk
- 1 can white kidney beans, strained and rinsed
- 2 Tbsp Italian seasoning
- 1 tsp smoked paprika
- 1/2 tsp poultry seasoning
- salt and pepper to taste
- 1 – 2 cups chopped kale
- 1/2 to one cup green peas
- Franks Red Hot Sauce (or your favourite) to taste
Add the olive oil, onions and garlic to a large soup pot. Stir fry for 2 minutes. Add the carrots, celery, sweet potato, potato, squash, and stir fry for about 5 more minutes. Pour in the vegetable broth, coconut milk and kidney beans. Season with the Italian spices, smoked paprika, poultry seasoning, salt and pepper. Stir all of the ingredients together. Bring to a boil. Reduce heat, cover the pot, and simmer for 20 minutes. Add the chopped kale, peas and hot sauce. Stir and let simmer for another 5 minutes.
Ladle into bowls and serve. FEEL THE LOVE.
