
Looking for healthy, meatless alternatives… this chickpea salad spread is wonderful in sandwiches and wraps. However, my favourite way to enjoy this, is to pile a generous scoop on top of a hot baked sweet potato. Add some steamed broccoli on the side for a hearty and satisfying meal. Meatless Monday… we’ve got you covered!
Ingredients
- 1 15- ounce can chickpeas (rinsed and drained)
- 1/4 cup roasted unsalted sunflower seeds
- 3 Tbsp vegan mayo
- 1/2 tsp dijon mustard
- 1/2 tsp poultry seasoning
- 2 chopped green onions
- 1/2 red pepper, diced
- sea salt and pepper to taste
Directions
Place chickpeas in a bowl and lightly mash with a fork.
Add sunflower seeds, mayo, mustard, onion, peppers, poultry seasoning, salt, and pepper.
Mix thoroughly, taste, and adjust seasonings as required.
Garnish with sliced avocado, sprouts, tomato, and lettuce, if you wish.
