Looking for healthy, meatless alternatives… this chickpea salad spread is wonderful in sandwiches and wraps. However, my favourite way to enjoy this, is to pile a generous scoop on top of a hot baked sweet potato. Add some steamed broccoli on the side for a hearty and satisfying meal. - 1 15- ounce can chickpeas (rinsed and drained)
- 1/4 cup roasted unsalted sunflower seeds
- 3 Tbsp vegan mayo
- 1/2 tsp dijon mustard
- 1/2 tsp poultry seasoning
- 2 chopped green onions
- 1/2 red pepper, diced
- sea salt and pepper to taste
Place chickpeas in a bowl and lightly mash with a fork.
Add sunflower seeds, mayo, mustard, onion, peppers, poultry seasoning, salt, and pepper.
Mix thoroughly, taste, and adjust seasonings as required.
