Blueberry Walnut Banana Bread

Now this is comfort! Served warm, with a hearty bowl of your favourite soup – a pair made in heaven! This banana bread recipe has been in our family for decades, and it is definitely a kid (of all ages) favourite! We hope you love it as much as we do.

INGREDIENTS:

1 ¾ cups light Spelt flour (or 1 cup all purpose flour and ¾ cup whole wheat flour)

2/3 cup raw sugar or honey

1 tsp. baking powder

½ tsp. salt

¼ tsp. baking soda

½ cup olive oil

2 eggs slightly beaten

1 cup mashed banana (about 3 bananas)

½ cup washed blueberries

½ cup pecan or walnut halves

DIRECTIONS:

Preheat oven to 350 degrees. Grease and flour a 9 by 5 loaf pan. Mix the first 5 ingredients in a large bowl. In a second bowl, mix the olive oil, beaten eggs, mashed bananas and blueberries. Pour the wet ingredients into the dry ingredients and stir just until mixed. Pour into a loaf pan. Top with pecans or walnuts.

Bake for 55 minutes or until golden brown and an inserted toothpick comes out clean.

Let cool, then remove from the pan. Try a slice while it’s still warm. Yummy!
