My son is an avid rock climber who can often be found traversing cliffs and mountains amongst good friends.

One of these friends is a very skilled climber and dedicated teacher. He travels the world in search of adventure and the ultimate challenging routes. He is admired by many, and has earned the nickname “Sensei”.
Sensei is very health conscious and loves to cook simple, nourishing vegetarian fare. After a great day of climbing, Sensei prepared this salad for my son and his buddies. It was a big hit.
Now that Spring is on its way, we are all craving time in nature, an adventure or two, and a beautifully delicious meal to enjoy with family and friends.

Sensei’s Salad

*this recipe is more of a suggestion… embrace freedom, creativity and adventure while preparing this delightful salad
- Cook the quinoa according to package directions.
- Roast vegetables of your choice: such as eggplant, zucchini, peppers.
- Dice sun dried tomatoes.
- Garnish with diced fresh mint and/or basil
- Toss all ingredients together. Serve cold or room temperature.
